Also, if the temperature becomes too hot, then the yeast will die and the sugar cannot be converted to alcohol, so that 65 degree mark is unquestionably important. That’s why the people I was with and I regularly keep the temperature control settings just right with the Heating, Ventilation plus A/C system.
