Temperature control is very important during the wine making process

I couldn’t believe it when my uncle passed away.

He actually put me in his will and I inherited his winery.

I didn’t know the first thing about operating a winery, but he still had his staff members and everything and they were there to help. I was basically the new boss, and I didn’t know how much money I would make in this particular business. My uncle was very rich, but he never showed off his money or anything, he just invested his money wisely. So I learned all about how to make the wine from growing the grapes, crushing them, moving them to fermentation tanks, then to barrels for aging, and eventually to the bottles and continuing to age the wine. It’s truly a remarkable process making wine, and it’s truly a profitable business to be in. I really am glad that my uncle decided to include me in the will. He always said that I had a lot of potential. I never really knew what he meant when I was younger, but I guess he always wanted someone in his family to take over his business when he eventually passed away. He didn’t have any children, and so I guess I was the next best thing to having a son take over the family business. The really interesting thing is the HVAC system in the winery. When the wine is aging, the wine has to be at the perfect temperature control settings. They tell me that during fermentation, you never want the wine to fall below 65 degrees. Also, if the temperature becomes too hot, then the yeast will die and the sugar cannot be converted to alcohol, so that 65 degree mark is very important. That’s why we always keep the temperature control settings just right with the HVAC system.
